Recipe: Brunch Stuffed French Toast

Stuffed French Toast

This is perfect for day off lazy-day-breakfast-brunch-mashup-meals.

Everyone’s had one of those, right? A day when you crawl out of bed around around noon and it takes half an hour of blinking at social feeds/blogs/forums for your brain to kick in to gear and process the fact that you are *very* hungry.

Eggs. Meat. Cheese. Starch. Right meow! Wash down with copious amounts of coffee or tea.

Stuffed French Toast

  • 2 slices challah bread;
  • 2 eggs
  • 1 tablespoon milk
  • 1 teaspoon pepper
  • 1 teaspoon salt
  • 1 teaspoon paprika
  • 2 strips of bacon
  • 2 slices of ham. I usually stock the delicious smoked ham from Super Kolbasa & Deli
  • 1 green onion julienned
  • 1/4 cup grated cheddar
  • 1/2 tablespoon of butter

Whisk eggs with the tablespoon of milk, salt, pepper and paprika.

Dip the bread slices in the mixture. I like using challah bread but any sliced bread will do, so long as it’s a good 1″ or so thick to soak up the egg nicely.

In a large pan, cook the bacon. Drain. Don’t eat the bacon! I know it’s tempting, I recommend covering it with a paper towel and setting it -far- aside.

Add the butter to the bacon grease in the pan and place two slices of egg-dipped bread in the middle of the pan. Make sure the heat is even. Cook for 2 minutes until golden.

Flip both slices. On one of them stack the ham and green onion strips. Break up the bacon strips in halves and layer them on top. Fry for 3 minutes aiming for a golden brown colour. Use the free slice of bread as a control for how crispy the outside is.

Sprinkle cheese on top of the meat stack and give it a moment to melt so as to hold everything in place. Cover with the other slice and using a spatula deliver it to a plate.

Optional: Drizzle with maple syrup
